At OA North we've recently produced a load of free PDF manuals on using open (mainly GIS) source software within archaeology. They include guides to total station and GPS survey, data download, using gvSIG and QGIS (a variety of tasks), enhancing maps and illustrations in Inkscape, databases in PostgreSQL and PostGIS, 3D visualisation etc.
They are all on the OA library (search for GIS), but I've also summarised them on my website.
